Whole100 :: 80 Day Recap

I’m finally starting to see the finish line and I can’t wait to cross it. It’s hard to believe that summer is almost over and that I’m only 20 days away from completing another round of Whole100. Go me!

These past 20 days have been quite boring. My husband traveled, the weather has been foggy, cloudy and rainy, and I haven’t been feeling my best. With the weather starting to change, it’s more difficult to rely on outdoor activities like running; so when we do have a sunny weekend I’ve been trying to take advantage and run.

I’m sure the picture I chose for this post is confusing. You’re probably wondering if I fell off the wagon and ate all of that. [Read more…]

Paleo Middle Eastern Sumac Chicken and Onions- Musakhan

Musakhan-MIDEASTPALEO

Musakhan (mu-Sa-khan) is the national dish of Palestine and one its people are very proud of. The Arabic word musakhan literally means reheated in English. The uniqueness of this dish is what makes it so special. Caramelized onions, chicken, sumac, a blend of spices, olive oil, toasted almonds and pine nuts on top of taboon bread soaked in the juices of the chicken and onions– the thought of it just makes my mouth water. All of these ingredients are cooked separately and then reheated together at the end, hence the name. Taboon bread (google for image) is a Middle Eastern flat bread that is baked on stones or in a cone-shaped clay oven. The bread is not Paleo friendly but I have found a way to still enjoy one of my favorite meals in a healthy way. [Read more…]

Here we are, my first 20 day update. So far, I’m feeling great! The first few days were rough. I was traveling and didn’t eat my normal Paleo diet, so jumping into a Whole100 was not easy. It was like my body was detoxing; I was in a bad mood, I had a strange headache, and my immune system was shutting down before I had even started day 1. I was even craving foods I don’t normally eat. Paleo Beet Salad

Salata-MIDEASTPALEOHappy Middle Eastern Mother’s Day! In honor of this special day and the first day of Spring, let me introduce you to my favorite salad and salad dressing. It’s so easy to make and so refreshingly delicious. This salad is such an important part of our culture. There are so many different variations and names for this salad. Some may add parsley, mint, onions, sweet bell peppers, chili peppers, or even avocados. Middle Easterners eat a variation of this salad as much as they eat rice and bread, so that’s a lot. It is also a great side for so many delicious Middle Eastern dishes, my favorite is the Palestinian dish, maklube.This salad is great on top of this Paleo rice stuffing with plain yogurt (laban), if you can tolerate dairy.
